Pear & Gorgonzola Salad

For the salad dressing:
- ¼ tsp Dijon mustard
- ¼ tsp oregano
- ¼ tsp honey or agave
- 6 tbsp olive oil
- 2 tbsp apple cider vinegar
- salt and pepper to taste
- Squeeze of lemon juice
For the salad:
- 3 tbsp crumbled gorgonzola or blue cheese
- 2 tbsp walnuts chopped, toasted
- 2 tbs cranberries dried
- 1 pear diced
- 2 cups arugula or wild lettuce mix
INSTRUCTIONS:
- Toast the walnuts on a griddle over medium heat for 4 minutes per side. Mix all salad ingredients together in a large salad bowl.
- Mix up the salad dressing.
- Top the salad with half the salad dressing. Mix well, but gently. If the salad requires more dressing, add one tsp at a time until the desired dressing is reached.
- Serve immediately.
