So lemony and perfect.  Soft lemon filling with the crunch of sugar icing on top.

INGREDIENTS:
CRUST:

  • 2 cups all purpose flour
  • 1 cup (2 sticks) salted butter, at room temperature
  • 1/2 cup powdered sugar

FILLING:

  • 2 cups granulated white sugar
  • 4 large eggs, lightly beaten
  • 1/4 cup all purpose flour
  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon baking powder

GLAZE:

  • 1 cup powdered sugar, sifted
  • 2 to 3 tablespoons freshly squeezed lemon juice

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.

PREPARE THE CRUST:

  1. In a large bowl, combine the crust ingredients and use an electric mixer to combine until crumbly.
  2. Press the mixture evenly into the bottom of an ungreased 13x9-inch pan. Bake 20 to 25 min., or until lightly browned.
