INGREDIENTS:
For the Cocktail Meatballs:
- 1 1/2 pounds ground beef
- 1/2 cup onion
- 1/2 cup green bell pepper
- 1/2 cup celery
- 1 clove garlic
- 2 tablespoons gluten free Worcestershire sauce
For the Cocktail Meatball Sauce:
- 2 cups gluten free ketchup
- 1/3 cup brown sugar
- 2 tablespoons molasses
- 1 teaspoon Creole mustard
- 1 teaspoon yellow mustard
- 1 teaspoon lime zest
- 1 teaspoon lime juice
- 2 teaspoon gluten free barbecue sauce
- salt black pepper, and cayenne pepper to taste
INSTRUCTIONS:
- Place ground beef in a large mixing bowl.
- Place the onion, bell pepper, celery, garlic, and Worcestershire sauce in blender or food processor. Pulse until liquefied.
- Pour the mixture into the ground beef, and use your hands to work the mixture into the beef. (Do not overwork the beef mixture or your meatballs will be tough.)
